Holiday Hill Rhubarb Pie

I received a 79th birthday surprise delivery from 4 nieces and nephews that warmed my heart and my stomach...a 2 crusted, rhubarb pie with no other fruit snuck in (why would anyone think additions to rhubarb is acceptable?). It was such a special gift from those very special nieces and nephews, and their choice of my favorite pie from what has now become my favorite pie shop has made for a truly memorable birthday. THAT PIE WAS AWESOME!

I grew up in Washington state where rhubarb grew everywhere and rhubarb pies were common. Now I live in Texas and you can' even find rhubarb in the fancy grocery stores. These rhubarb pies are a tase of the past, when pies were good, not just sweet.
